  • Looking Chili

    I'm in a chili extravaganza. Yesterday's chili cook off at work was tasty. There were 10 participants and 21 tasters. I didn't think I'd win a prize but I did! I won second place. I enjoyed tasting everyone's version of the perfect chili. I'm happy to say that there was just enough leftover for Sparky to enjoy my "award winning" chili!
    The first place prize was for a very smooth chili that was a little sweet and a little spicy - a worthy winner! There was one chili that was so spicy that no one could take more than a couple bites. Mr. Fudd brought venison chili that had rice in it - novel and tasty but not a winner. My votes went for the other chicken chili made with shredded chicken and in a tomato base with roasted poblano peppers and the last year's winner which was a ground turkey chili with a touch of cinnamon. But I know you all want my "Award Winning" Creamy Chicken Chili recipe:

    Ingredients:
    two tablespoons olive oil
    half a sweet onion chopped
    one can petite diced tomatoes
    one can Bush's white chili beans
    one can cannellini beans
    one can cream style corn

    one large can white meat chicken
    2 Teaspoons chili powder
    half teaspoon ground cumin
    one cup sour cream

    Instructions:
    In a large pot saute onion in olive oil until soft and translucent. Add cream style corn, beans, and chicken - stir well.

    Rinse cans with about a half cup water to get the last bit of yum out of them. Add the rinse water to the pot. Next stir in the tomatoes and the spices.

    Bring the chili to a boil stirring frequently. Reduce the heat and allow it to cool a bit before adding the sour cream. Mix the sour cream into the chili.

    The chili is ready to serve!

  • An interesting chili. I make mine is a slow cooker and it is very mild.

    • I've never understood the concept of making the chili so spicy that you are in pain. Mild chili is the best kind!!

    • Thanks! I was surprised that I won 2nd place - but it is nice that the chili makers were all anonymous and so it wasn't a popularity contest!
